Rockstar Gingered Cabbage Coleslaw
Ingredients:
3 cups shredded red cabbage, about 1⁄2 of a medium cabbage
1-2 carrots, freshly grated
1⁄4 cup cilantro, chopped
1⁄4 cup fresh mint, chopped
2 green onions, finely minced
1/3 cup tamari roasted pumpkin seeds
Fresh Ginger Dressing Ingredients:
1⁄4 cup unrefined sesame oil
2 tbsp. extra-virgin olive oil
1⁄4 cup brown rice vinegar
1⁄2 tsp. grated ginger
1 tbsp. Tamari
1⁄2 tsp. of honey (Optional: avoid if you have candida overgrowth.)
Instructions:
Combine cabbage, carrots, onions, and herbs together.
In a small bowl combine all ingredients of the fresh ginger dressing together and whisk thoroughly.
Pour dressing over the slaw, and top with pumpkin seeds!
This hearty slaw is even better the next day, so make extra.
